紅豆熟。研爛淘去皮。小蒲包濾極乾。入沙糖食香搦餡脫。或面劑開放此餡造。澄糖千葉蒸餅。

熟面筋絲。碎筍片。木耳。姜片。或加蘑菇。桑莪蕈。下油鍋炒半熟。傾入擂爛。醬椒沙糖少許。粉牽熟。候汁乾供。

牛乳不拘多少。取於鍋釜中。緩火煎之。緊則底焦煿牛馬糞火為上。常以杓揚。勿令溢出。時復徹底縱橫直勾。勿圓攪。若斷。亦勿口吹。吹則解候四五沸便止。瀉入盆中。勿揚動。待小冷。掠去浮皮。著別器中。即真酥也。餘者生絹袋濾。熟乳乾淨磁罐中臥之。酪罐必湏火炙乾候冷。則無潤氣亦不斷。若酪斷不成。其屋中必有蛇蝦蟇故也。宜燒人髮牛羊角辟之則去。其熟乳。待冷至溫如人體為候。若適熱臥則酸。若冷則難成濾訖。先以甜酪為酵。火率熟乳一升。用甜酪半匙。著杓中以匙痛攪開。散入熟乳中。仍以杓攪勻。與氈絮之屬。覆罐令暖良久。換單生布蓋之。明旦酪熟。或無舊酪漿水一合代之亦不可多。六七月造者。令如人體。只置於冷地。勿蓋。冬月造者。令熱於人體。
