小形豘一頭,𦢸開,去骨,去厚處,安就薄處,令調。取肥豬肉三斤,肥鴨二斤,合細琢。魚醬汁三合,琢蔥白二升,薑一合,橘皮半合,和二種肉,著豬上,令調平。以竹之,相去二寸下。以竹箬著上,以板覆上,重物迮之。得一宿。明旦,微火炙。以蜜一升合和,時時刷之。黃赤色便熟。先以雞子黃塗之,今世不復用也。

取肥子鵝肉二斤,剉之,不須細剉。好醋三合,瓜菹一合,蔥白一合,薑、橘皮各半合,椒二十枚作屑,合和之,更剉令調。裹著充竹上。破雞子十枚,別取白,先摩之令調,復以雞子黃塗之。唯急火急炙之,使焦,汁出便熟。作一挺,用物如上;若多作,倍之。若無鵝,用肥豘亦得也。

取極肥子鵝一頭,淨治,煮令半熟,去骨,剉之。和大豆酢五合,瓜菹三合,薑、橘皮各半合,切小蒜一合,魚醬汁二合,椒數十粒作屑。合和,更剉令調。取好白魚肉細琢,裹作,炙之。

白魚長二尺,淨治,勿破腹。洗之竟,破背,以鹽之。取肥子鴨一頭,洗治,去骨,細剉;酢一升,瓜菹五合,魚醬汁三合,薑、橘各一合,蔥二合,豉汁一合,和,炙之令熟。合取從背、入著腹中,之如常炙魚法,微火炙半熟,復以少苦酒雜魚醬、豉汁,更刷魚上,便成。
