《卷九》
4  | 先養宿豬令肥，臘月中殺之。𢸧訖，以火燒之令黃，用煖水梳洗之，削刮令淨，刳去五藏。豬肪煼取脂。肉臠方五六寸作，令皮肉相兼，著水令相淹漬，於釜中煼之。肉熟，水氣盡，更以向所煼肪膏煮肉。大率脂一升，酒二升，鹽三升，令脂沒肉，緩火煮半日許乃佳。漉出甕中，餘膏仍瀉肉甕中，令相淹漬。食時，水煮令熟，而調和之如常肉法。尤宜新韭「爛拌」。亦中炙噉。其二歲豬，肉未堅，爛壞不任作也。 |
