74  | 蔡襄《茶錄》：茶色白，宜黑盞。建安所造者，紺黑，紋如兔毫。其坯微厚，熁之久，熱難冷，最為要用。出他處者，皆不及也。其青白盞，鬥試家不用。 |
| 76 | 〔按〕《方輿勝覽》云：兔毫盞，出甌寧，下注云，黃魯直詩，「建安瓷碗鷓鴣斑」，是鷓鴣斑即兔毫盞。鬥試之法：以水痕先退者為負，耐久者為勝。故較勝負曰一水、雨水。茶色白入黑盞，水痕易驗，兔毫盞之所以貴也。又《茶錄》云：凡欲點茶，先須熁盞令熱，冷則茶不浮。兔毫坯厚，久熱用之適宜。稱兔毫者，皆曰建安，而許次紓謂定州兔毛花為鬥碾之宜，定州先有之耶？東坡《試院煎茶詩》云，「定州花瓷琢紅玉」，又不獨貴黑盞。《送南屏謙師詩》云：「道人曉出南屏山，來試點茶三昧手，忽驚午盞兔毛斑，打出春甕鵝兒酒。」又以兔毫盞盛鵝兒酒矣。 |
