《卷上》
3  | 蟹，水蟲也。其字從蟲盱鬼反，亦曰魚屬，故古文從魚作蟹。以其外骨則曰介蟲，取其橫行目為螃蟹焉。骨眼蜩腹，䖱腦鱟足，其爪類拳丁，其𩪋類執鉞，匡跪又皆外刺。性復多躁，或編諸繩縷，或投諸笭箵，則引聲噀沫，必死方已。類皆䲊育，生於濟鄆者其色紺紫，出於江淛者其色青白。此舉其所育多者爾，凡有水之地，不無此味。小者謂之蟚蚎，中者謂之蟹匡，長而鋭者謂之蠞，音截甚大者謂之蝤蛑。雖皆有佳味，獨蟹參於藥論耳。明越谿澗石穴中亦出小蟹，其色赤而堅，俗呼為石蟹，與生伊洛者無異。厴圓多腴而奪之𩪋，臍長多瘠而與之蝦。其生於盛夏者，無遺穗以自充，俗呼為蘆根蟹。謂其止食茭蘆根瘠小而味腥，至八月則蛻形。已蛻而形浸大，秋冬之交稻梁已足，各腹芒走江，俗呼為樂蟹，最號肥美。由江而納其芒於海，中之魁遇冰雪則自伏淤澱，不可得矣。今人設啖具以案酒者，此特為之先置焉。江淮間尚推重如此，況非所育之地乎。何曽食疏，弘君食橄，虞悰飲食，亦未必不珍此味也。虞悰南史有傳，但名存而書亡，此為恨耳。 |
