周延，字南喬，吉水人。嘉靖二年進士。除潛江知縣，改新會，擢兵科給事中。時議新建伯王守仁罪，將奪其爵。延抗疏為訟，坐謫太倉州判官。歷南京吏部郎中，出為廣東參政。撫安南，徵黎寇，皆預，有功。三遷廣東左布政使。以右副都御史巡撫應天。靖海寇林成亂。進兵部右侍郎，提督兩廣軍務。召為刑部左侍郎。歷南京右都御史，吏、兵二部尚書。

歷左布政使，就擢巡撫右副都御史。入為刑部右侍郎，改戶部。初，森在江西薦布政使宋淳。淳後撫南、贛，以贓敗，森坐調大理卿。屢駁疑獄，與刑部尚書鄭曉、都御史周延稱為「三平」。病歸，起南京工部右侍郎。改戶部，督倉場，尋轉左。以右都御史總督漕運，兼巡撫鳳陽，遷南京戶部尚書。隆慶初，改北部。
