十二月、正月为上时,二月为中时,三月为下时。用不津瓮,瓮津则坏酱。尝为菹、酢者,亦不中用之。置日中高处石上。夏雨,无令水浸瓮底。以一鏉一本作「生缩」铁钉子,背「岁杀」钉著瓮底石下,后虽有妊娠妇人食之,酱亦不坏烂也。 用春种乌豆,春豆粒小而均,晚豆粒大而杂。于大甑中燥蒸之。气馏半日许,复贮出更装之,回在上者居下,不尔,则生熟不多调均也。气馏周遍,以灰覆之,经宿无令火绝。取乾牛屎,圆累,令中央空,燃之不烟,势类好炭。若能多收,常用作食,既无灰尘,又不失火,胜于草远矣。啮看:豆黄色黑极熟,乃下,日曝取乾。夜则聚、覆,无令润湿。临欲舂去皮,更装入甑中蒸,令气馏则下,一日曝之。明旦起,净簸择,满臼舂之而不碎。若不重馏,碎而难净。簸拣去碎者。作热汤,于大盆中浸豆黄。良久,淘汰,挼去黑皮,汤少则添,慎勿易汤;易汤则走失豆味,令酱不美也。漉而蒸之。淘豆汤汁,即煮碎豆作酱,以供旋食。大酱则不用汁。一炊顷,下置净席上,摊令极冷。 预前,日曝白盐、黄蒸、草𦺖居恤反、麦麴,令极乾燥。盐色黄者发酱苦,盐若润湿令酱坏。黄蒸令酱赤美。𦺖令酱芬芳;𦺖,挼,簸去草土。麴及黄蒸,各别擣末细簁——马尾罗弥好。大率豆黄三斗,麴末一斗,黄蒸末一斗,白盐五升,𦺖子三指一撮。盐少令酱酢;后虽加盐,无复美味。其用神麴者,一升当笨麴四升,杀多故也。豆黄堆量不概,盐、麴轻量平概。三种量讫,于盆中面向「太岁」和之,向「太岁」,则无蛆虫也。搅令均调,以手痛挼,皆令润彻。亦面向「太岁」内著瓮中,手挼令坚,以满为限;半则难熟。盆盖,密泥,无令漏气。 熟便开之,腊月五七日,正月、二月四七日,三月三七日。当纵横裂,周回离瓮,彻底生衣。悉贮出,搦破块,两瓮分为三瓮。日未出前汲井花水,于盆中以燥盐和之,率一石水,用盐三斗,澄取清汁。又取黄蒸于小盆内减盐汁浸之,挼取黄渖,漉去滓。合盐汁泻著瓮中。率十石酱,用黄蒸三斗。盐水多少,亦无定方,酱如薄粥便止:豆乾饮水故也。 仰瓮口曝之。谚曰:「萎蕤葵,日乾酱。」言其美矣。十日内,每日数度以杷彻底搅之。十日后,每日辄一搅,三十日止。雨即盖瓮,无令水入。水入则生虫。每经雨后,辄须一搅。解后二十日堪食;然要百日始熟耳。
